Vegan BBQ Picnic Recipes
Summer is hands down my favorite season! I love soaking up the heat and extra evening daylight. One of our favorite things to do is whip up a quick picnic and head to Lake Harriet (or Lake Calhoun) for a simple outdoor date night.

VEGAN “TUNA” PASTA SALAD
(Makes enough for 2 to 4 people.)
8oz elbow noodles
1 can mashed garbanzo beans
1 carrot shredded
2 celery stacks chopped
1 pickle chopped
1 sprig dill chopped
5 tbsp vegan mayo
1 tbsp Old Bay seasoning
1/2 tsp garlic salt
1/2 tsp smoked paprika
1 tsp hot sauce
salt and pepper to taste

VEGAN BBQ PULLED “PORK” WRAP
(Makes enough for 2 to 4 people.)
1 package Uptons BBQ Jackfruit
1 large tortillas
1/2 avocado sliced
1/3 cup vegan coleslaw – see recipe below
VEGAN COLESLAW
1/4 head of red cabbage shredded or finely sliced
1 carrot shredded
1 sprig dill chipped
2 tbsp vegan mayo
salt and pepper to taste
